Mexican Street Corn Inspired Pasta

Celebrating sweet corn season with this tangy, sliiightly spicy pasta dish.

A street corn-inspired creamy dressing coats a batch of pasta, and is tossed with fresh (or frozen) corn.

This can be used as a fun dish at a dinner party, or served for dinner! The tangy chili-lime tajin is optional, but it really does give that extra kick to this dish, and is a staple on authentic Mexican Street Corn!

Ingredients

  • 8 oz pasta
  • 3 ears of corn, boiled
  • ⅓ cup Greek yogurt
  • ½ cup regular or light mayo
  • 4 tbsp lime juice
  • 3 cloves minced garlic
  • ½ tsp of chipotle chili powder
  • ¼ tsp cumin
  • Salt, to taste
  • Black pepper
  • ½ cup red onion
  • 1 bell pepper, diced
  • ½ cup of cotija cheese

Directions

  1. Cook pasta according to package directions and cut corn off the cob.
  2. Meanwhile, combine yogurt, mayo, lime juice, garlic, spices, salt, & pepper.
  3. In a separate bowl, combine pasta, corn, bell pepper, onion, and cotija.
  4. Pour the sauce on top and mix.
  5. Serve with tajin & enjoy!
