Mexican Street Corn Inspired Pasta
Celebrating sweet corn season with this tangy, sliiightly spicy pasta dish.
A street corn-inspired creamy dressing coats a batch of pasta, and is tossed with fresh (or frozen) corn.
This can be used as a fun dish at a dinner party, or served for dinner! The tangy chili-lime tajin is optional, but it really does give that extra kick to this dish, and is a staple on authentic Mexican Street Corn!
Ingredients
- 8 oz pasta
- 3 ears of corn, boiled
- ⅓ cup Greek yogurt
- ½ cup regular or light mayo
- 4 tbsp lime juice
- 3 cloves minced garlic
- ½ tsp of chipotle chili powder
- ¼ tsp cumin
- Salt, to taste
- Black pepper
- ½ cup red onion
- 1 bell pepper, diced
- ½ cup of cotija cheese
Directions
- Cook pasta according to package directions and cut corn off the cob.
- Meanwhile, combine yogurt, mayo, lime juice, garlic, spices, salt, & pepper.
- In a separate bowl, combine pasta, corn, bell pepper, onion, and cotija.
- Pour the sauce on top and mix.
- Serve with tajin & enjoy!
